Health 104: Weight and Your Health -- Spring 2014



That's it and that's all. After yesterday's Health 104: Weight and Your Health lecture...For the 2013-14 school year I OFFICIALLY helped about 400 Clark College students, step OUTSIDE of the prepared food Box!

I'd like to thank the professors (Veronica, Kristen, Erin) who invited me to their classrooms, the Health and Physical Education department, and all the students for embracing my ideas -- you all inspire me.

I have the coolest "job" ever! I'm already looking forward to the 2014-15 school year!

A hop, skip, and a jump





I love the Pacific Northwest in all it's splendour. On Saturday, my girlfriend,  took me on a day trip to The Gorge. The drive itself is beautiful! We settled at a spot called, Rowena Crest with picnic goods we picked up at New Seasons Market. The weather was perfect, the sights were spectacular, and I was in good company. 









Then on Sunday after church, another girlfriend and I ate our lunch at Peninsula Park in the Rose Garden. There's so many wonderful spots to explore and enjoy here in the Pacific NW.  So lucky to have all this beauty just a hop, skip, and a jump away!

Health 100: Food and Your Health--Spring 2014, Day 2




Two days, four classes, and 120 Clark College students are OFFICIALLY Outside of the Box! Clark College is by far my favorite place to visit. Today, I was in East Vancouver at the Columbia Tech Center campus. I absolutely love talking to and with the students and showing them how simple it is to make food OUTSIDE of the Box! So much fun, delicious fun! I have the coolest "job" ever!

Health 100: Food and Your Health--Spring 2014





Today, as a guest lecturer at Clark College, I successfully helped about 60 Health 100 students step outside of the prepared food box. Our focus was on how to prepare and use whole grains. We also made smoothies using whole foods.

The students all agreed that the food was delicious, simple to make, and they could and would make the recipes at home. Music to my ears.

I've said it before and I'll say it again, I love what I do!

2014 Get Fit Challenge: Health Fair



What an awesome time I had last night at the 2014 Get Fit Challenge: Health Fair hosted by Emmanuel Church. I was invited to set up a table with info about food and health and sell my cookbooks.

It was a great mix of people eager to get ideas on how to live more healthy lifestyles.  I was able to do what I love -- greet and meet lots of folks and talk food. There's never a bad day at the office for me. Sharing my love of food with others - Winning!



The Obesity Epidemic is REAL!

The evidence of an epidemic is everywhere.

· Two-thirds, more than 190 million Americans are
overweight or obese.

· Obesity-related diseases are a $147 billion dollar
medical burden every year.

· Childhood obesity has tripled in the last thirty years
