Excerpt from "Bringing Cooking Back"

Tomorrow I will meet with a panel of four to see if we can incorporate my recipe ideas into their new program. It's an exciting opportunity. As I've been preparing for our meeting I've been fumbling through my cookbooks. I thought it would be nice to share with you the introductions from each.

Introduction  

I love food. Good wholesome food. Not so-called food from a box or in a box. But, food, my late grandmother would recognize. Food that grows from the earth, free of preservatives, and will eventually rot. 

I prepare 99 percent of my meals at home. Honestly, I don’t know any other way. Cooking is natural for me. My mother cooked at home. My grandmother did too. I have fond memories of watching my mother in the kitchen lovingly preparing dinner for us. The aroma of freshly baked cornbread, butter beans, and fried chicken for Sunday dinner.

My love for food became a problem though when I ballooned up to 388 pounds. One too many pieces of cornbread, consumption of highly caloric processed food, with no exercise contributed to my progressive weight gain. I’m proud to say, however, I took control. Through conscious food choices, food preparation, and exercise to date, I’ve lost 170 pounds and counting.

A healthy lifestyle for me begins at home in my kitchen. Cooking at home is not only how I was raised, but it allows me to be in control of what I eat. I abused food for a long time by making poor food choices and overeating. Today, I no longer abuse food, I enjoy it to the fullest by eating a variety of fruits, vegetables, grains, and adding zest to my dishes with seasonings.

I prepare, cook, and eat at home because the thought of a complete stranger preparing my food seems impersonal to me. Cooking is a labor of love. Creative, love. I chop, dice, mince, puree, grate, and stir with affection. I’m feeding my body, after all; that calls for the finest ingredients and loving preparation.

I’ve never bought into the fat-free, sugar-free, craze. Frankly, I don’t want to compromise the taste of my food by using substitutes. I use real cream, real butter, and yes, even sugar. My recipes call for these ingredients, I encourage you to use these ingredients too. Maybe some critics will say my meals don’t fall into the “healthy” category, but I’m confident preparing my food at home is much better than the alternative. Besides, I’ve lost 170 pounds -- my way.

I welcome you to make adjustments to my recipes to suit your taste and dietary needs. Perhaps you want to make my to Die For Southwestern Chicken Soup less spicy. Go ahead, omit the cayenne pepper. That’s the beauty of cooking at home. You’re in control. Once you become comfortable in the kitchen you’ll learn to experiment freely.

I’ve strayed away from my mother and grandmother’s recipes a bit, but the art of cooking was taught to me by them and will always stay with me. Today, I follow modern day cooks and add a few of my own twist to come up with good wholesome recipes.

I’m thankful for the women in my life for passing on their love for home cooked meals to me. Undoubtedly, I’m sharing the same love for food with my daughter as well.

Catering by Chrisetta: 40th Surprise Birthday Party


My friend and client Christie asked me to cater a surprise birthday party for her husband, Derek. I've never been involved in, or to a surprise party. So, I was super excited to be involved. And man was I involved, my job was to feed a crowd of thirty. 
 

Derek is a big, athletic guy and he sure can eat. With that in mind, I tailored the menu around his appetite: Blue Cheese Burgers, Guacamole Burgers, Beef Kebabs, Potato Salad, Tomato & Corn Quinoa Salad, Simple Slaw with Peanut Dressing, Crudités with Ranch Dip, and Tortilla Chips with salsa and guacamole. I pride myself on making all my sauces, spreads, dressings from scratch and hand chopping all my vegetables and fruits. It's that whole OUTSIDE of the Box thing, ya know?

What's for dinner? Chicken Tikka Masala

I've said this before, but it's worthy of repeating...With a well-stocked kitchen you can whip up a meal in a cinch, whole natural ingredients lend for creativity, and with spices on hand you can travel the world. Tonight's meal was evidence of those statements, the result was Indian Cuisine in the comfort of my home -- Outside of the Box!

Week 6: Learn to Shop, Cook, Eat: Outside of the Box with Chrisetta Mosley

The final session nourishing the desert...Tuesday, April 30th.

We spent six weeks together learning how to shop and create healthy, simple delicious meals -- OUTSIDE of the Box!

For the final session I whipped up: Smokey Black Bean Dip with fresh Baked Tortilla Chips and Kale Chips (not shown) -- they gobbled them up too fast. ;) And, Nikki an eager class participant followed my Cashew Energy Bars recipe and brought a few in for us to enjoy! Now, that's OUTSIDE of the Box.

Prep time



I’ll be honest, shopping, cooking, and eating “Outside of the Box” requires a commitment. Having a plan of action will save time and ultimately make the days easier.

For most folks, one of the biggest challenges to eating and living “Outside of the Box” is being prepared. On the food front: Being prepared means of course grocery shopping, but it also means once home with the goods taking it one step further — prepping. Slicing and chopping the fresh produce, hard-boiling eggs, making side dishes, making a pot of beans and/or grains, packaging up nuts and grains, etc.

Though, I am fortunate to work for myself from home or near home. I still benefit and stay on track better when I am prepared.  I dedicated part of my Saturday to prep time. So, this week when I'm blogging and my stomach starts grumbling I can just go grab a quick snack. Or after a day of talks and presentations I can come home and reheat with ease.

I prepped fresh veggies (carrots, cucumbers, and mushrooms), made a pot of wheat berries, and three side dishes (Sautéed Collard Greens with Garlic, Baked Sweet Potatoes, Parmesan Roasted Cauliflower).

Prepping tips:

Fresh produce always takes a little prep time. Do it in bulk right when you get home from the grocery store that way you'll be prepared throughout the week.

1. Pull out a cutting board, a colander, knife, produce peeler.
2. Rinse and/or peel produce. Get to slicing.
3. As you're slicing, put on the pot of beans, grains, eggs (cook as directed).
4. After vegetables are sliced either place in storage bags/containers or prepare as side dishes.
6. Once beans, grains, or eggs are finished cooking.  Allow to cool slightly and then store in fridge.

Outside of the Box Finals at Clark College

Day Two: Grub time!
I was invited by my mentor and friend, Veronica to host a food presentation for her Health 100: Food and Your Health students' final. The students have been discussing and learning about food and health all quarter and using my cookbook.  My final visit was an OUTSIDE of the Box, delicious way to wrap up the course.

Santa Fe Chicken Wraps with Fresh Salsa

I really enjoyed my time with the students. It was super-duper fun being among all the youthful energy. After each class, I always ask the students if they can and will make the recipes at home. The consensus among the students was that the recipe ideas I shared with them were totally doable and they would indeed try them. So, with that said -- they are officially OUTSIDE of the Box.

I lectured for 11 classes and four programs at Clark College during Winter quarter 2013.  I made lots of connections with the students, staff and faculty. Thanks to the Health department for having me and extra-thanks to: Veronica Brock, Kristen Myklebust, Erin Staples, Kristin Woitte, Garet Struder, and Steve Demassa.

What's Happening in March

Sometimes, I just have to pause and say thank you. First and foremost to God for all His Gifts and Blessings. Next, I'm grateful, thankful, and appreciative for everyone who supports and encourages me. I love what I do (Speaking, cooking, blogging) and I wouldn't be able to do it without the support of my loved ones and folks from the community. Thank you!

February was fantastic but also had traces of being a little frantic.  I spoke more times than I ever spoke in one month in February 2013 -- including  nine lectures at Clark College some were even back-to-back.  Phew.
 
I've made quite a few new connections over the past few months, which leads to lots of new opportunities. I'm really excited about the connection I've made with The Fruit Valley Foundation (FVF). And, super-stoked that FVF has engaged me to do a FREE six-week program for the community of Fruit Valley -- Learn how to Shop, Cook, Eat: Outside of the Box with Chrisetta Mosley.  The program will offer fresh, healthy OUTSIDE of the Box ideas and recipes to anyone who lives, works, or plays in the Fruit Valley neighborhood. The program begins on Tuesday, March 19th, 4-5:30 p.m. See flyer for all the details.
 



Another new venue -- Lacamas Sport & Swim has asked me to do a Healthy Food Presentation for their SilverSneakers group. I'll be there Friday, March 15th, 12 - 1 p.m. *For Lacamas Sport & Swim members ONLY 

On March 19th and 21st I'll be back on campus at Clark College hosting a cooking demo for their Health 100: Food and Your Health finals.

V day!

Yesterday, was V day with a double meaning. It was Valentine's Day, but I also declare it Veronica day. A little history...Veronica Brock was my Health 100: Food and Your Health professor at Clark College just over a year ago. She's the force behind me learning so much about food, how it is meant to nourish our bodies, and how the food we eat relates to our health and the environment.

As I learned and blossomed she recognized the seed she planted. After completing the course we stayed in touch. She's the force behind me authoring -- Shop, Cook, Eat: Outside of the Box, how it became a REQUIRED book for the class, and how I've come to have the pleasure of guest lecturing at Clark College.

So yesterday for me to lecture in the very classroom with her by my side was AWESOME.

She won't take much credit for my success. Instead, she says it my enthusiasm and determination that got me the deal. But, I argue she absolutely has to take some of the credit. She believed in me and my ideas. Thanks for putting me on V. Forever grateful.

Outside of the Box: Chili

I'm on a mission to share my love for good, real food -- Outside of the Box with you. Today, I whipped up spicy, hearty chili served with Cilantro Lime Rice. In less than 1.5 hours I created this meal and that's with me talking and entertaining. The cost was less than $25 and I used premium goods. So, see it's simple and inexpensive to eat OUTSIDE of the Box!
