Friday evening, I hosted my second Healthy Cooking 101 class at
Chuck's Produce. I took my guests on a culinary trip to the Mediterranean: Organic chicken breast with a unique blend of seasonings -- cumin and cinnamon, kalamata olives, grape tomatoes, feta cheese, atop crisp red leaf lettuce served with a choice of freshly prepared lemon vinagrette or hummus.
